Indulge in decadent dark chocolate and juicy cherries for delightful ice cream sandwiches.
Ingredients:
  • 1 litre brand creamy vanilla ice-cream, softened
  • 100g brand white cooking chocolate, grated
  • 2 tsp rosewater
  • Pink food colouring, as required
  • 200g cherry
  • 20 choc ripple biscuits
  • 100g brand dark cooking chocolate, melted
Instructions:
  • Scoop ice-cream into large bowl. Mix in white chocolate, rosewater, and coloring. Gently stir in cherries. Transfer mixture to freezer container. Freeze until firm but still slightly soft.
  • Prepare a baking paper-lined oven tray in the freezer. Spread 1/4 cup of ice cream onto the rippled side of a biscuit. Top it with another biscuit, pressing down to spread the ice cream to the edges. Use a butter knife to smooth the edges. Repeat with the rest of the ingredients to make a total of 10 ice cream sandwiches.
  • To serve, stack ice-cream sandwiches on a plate, drizzle with rich dark chocolate, garnish with extra cherries, and enjoy immediately.
