Choc-cherry lollipop biscuits

Stunning biscuit pops guaranteed to be a hit at any gathering.
Ingredients:
  • 375g plain flour
  • 2.50 gm bicarbonate of soda
  • 200g unsalted butter, softened
  • 220g brown sugar
  • 150g caster sugar
  • 2 eggs
  • 6.60 gm vanilla extract
  • 250g milk chocolate, coarsely chopped
  • 200g glace cherry
Instructions:
  • Begin by preheating the oven to 180°C. In a bowl, sift together flour, bicarbonate of soda, and 1/4 teaspoon of salt. Use an electric mixer to beat the butter and sugars until they are light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and then gently mix in the flour until just combined.
  • Shape heaped tablespoonfuls of the mixture into balls and space them 5cm apart on baking paper-lined oven trays. Flatten each ball into a 5cm round using your palm. Gently press an icy pole stick into each round, followed by chocolate pieces and cherries. Bake the biscuits for 8-10 minutes until they turn golden. Allow to cool on the trays and then store in an airtight container for up to 2 weeks.
