Keto energy balls: the ultimate low-carb, guilt-free snack.
Ingredients:
  • 20.00 ml chia seeds
  • 300g (2 cups) macadamia nuts
  • 120g (1 1/3 cups) desiccated coconut
  • 40.00 ml xylitol
  • 40.00 ml cacao powder
  • 20.00 ml orange zest
  • 30g butter, melted, cooled
  • Pinch of sea salt
Instructions:
  • Combine the chia seeds and 2 tablespoons of water in a bowl. Let it sit for 10 minutes, stirring occasionally, until the mixture becomes gel-like after the water has been absorbed.
  • Add the macadamia nuts, 1 cup of coconut, xylitol, cacao powder, zest, butter, chia mixture, and salt to the food processor bowl. Pulse until finely chopped and thoroughly mixed.
  • Transfer the nut mixture to a bowl. Shape level tablespoonfuls of the mixture into balls. Spread the remaining coconut on a plate and roll the balls in the coconut to coat lightly.
  • Transfer the dish to a sealed container and refrigerate for freshness for up to 1 week.
