Indulge in heavenly orange-infused chocolate muffins for a delightful afternoon treat.
Ingredients:
  • 175g butter, chopped, at room temperature
  • 175g dark chocolate, chopped
  • 180.00 gm brown sugar
  • 3 eggs, lightly beaten
  • 1 orange rind, finely grated
  • 150.00 gm self-raising flour
  • 20.00 gm cocoa
  • 6 slices orange, halved
Instructions:
  • Preheat your oven to 180C (160C fan). Arrange paper cases in a 12-hole, 1/3-cup muffin pan.
  • In a heat-proof bowl set over simmering water, melt butter and chocolate together until smooth. Stir in sugar until dissolved, then take off the heat.
  • Combine the eggs and zest, then beat until fully incorporated using a wooden spoon.
  • Combine sifted flour and cocoa into the mixture gently until just combined. Transfer the mixture into prepared pans and garnish each with a slice of orange. Bake for 20-25 minutes, or until a skewer inserted comes out clean. Allow to cool on a wire rack.
