Chocolate, coconut and lemon bars

Indulge in irresistible chocolate, coconut, and lemon bars during the epic MasterChef finale!
Ingredients:
  • 220g cold unsalted butter
  • 120g (1 2/3 cups) shredded coconut, plus extra, to decorate
  • 200g (1 1/4 cups) icing sugar
  • 50g (1/3 cup) self-raising flour
  • 2 lemons, zested, juiced
  • 1/2 tsp vanilla bean paste or extract
  • 6 egg whites
  • 4 egg yolks
  • 75g (1/3 cup) caster sugar
  • 100g dark chocolate (70% cocoa solids), chopped
Instructions:
  • Preheat your oven to 180C and prepare an 8-hole, 6cm x 9cm mini loaf pan by greasing and lining the bases with baking paper.
  • In a small pan over low heat, melt 150g butter. In a large bowl, combine coconut with sifted icing sugar, flour, and 1/4 teaspoon salt. Add zest, vanilla, melted butter, and egg whites, stirring until just combined.
  • Transfer the batter into the lined pan and bake for 25 minutes, or until the bars turn golden and spring back when lightly pressed. Run a small knife around each bar, carefully remove them from the pan, and place them on a wire rack to cool.
  • Prepare the lemon curd by combining egg yolks and caster sugar in a bowl, whisk until smooth. Mix in lemon juice until well combined. Create a water bath by simmering water in a saucepan. Place the bowl over the pan and whisk constantly until the mixture thickens to the consistency of double cream, about 5 minutes. Stir in finely chopped butter until melted. Chill in the refrigerator for 2 hours until firm. Yield: 1 1/4 cups.
  • Melt chocolate and the remaining 20g chopped butter together in a small heatproof bowl set over a saucepan of gently simmering water, stirring until smooth.
  • Cut the coconut bars in half horizontally, then generously spread each half with zesty lemon curd before sandwiching them together. Drizzle a luxurious layer of chocolate on top and sprinkle with an extra touch of coconut for a delightful finish. Place in the fridge for 5 minutes to set the chocolate.
