Indulgent chocolate caramel slice with buttery biscuit base, gooey caramel, and chocolate topping. A beloved classic for sweet tooths, easily customizable. Ingredients:
  • 250.00 ml plain flour, sifted
  • 90.00 gm brown sugar
  • 42.50 gm Desiccated Coconut
  • 125g Organic Unsalted Butter, melted
  • 395g can NESTLÉ Sweetened Condensed Milk
  • 53.60 gm golden syrup
  • 60g Organic Unsalted Butter, melted
  • 125g cooking chocolate, chopped
  • 60g copha, chopped
Instructions:
  • Preheat oven to 180°C and prepare a 28 x 18cm (base) lamington pan by lining it with parchment paper.
  • In a bowl, mix together all base ingredients until well combined. Press the mixture into a prepared lamington pan. Bake for 15 to 20 minutes, or until lightly golden. Allow to cool after removing from the oven.
  • Prepare the filling by mixing all filling ingredients in a saucepan over medium heat, stirring constantly for 8 minutes until golden. Pour the mixture over the cooked base and bake for 12 minutes until firm. Allow it to cool completely, then refrigerate for 3 to 4 hours until set.
  • Prepare topping by combining chocolate and copha in a heat-proof bowl set over a saucepan of simmering water. Stir until completely melted. Pour the mixture over the caramel layer. Chill in the refrigerator until firm, then slice into squares before serving.
