Indulge in a decadent caramel-chocolate fusion with a sprinkle of sea salt for a delightful twist.
Ingredients:
  • 125g butter, chopped
  • 200g Baking Dark Chocolate, chopped
  • 107.50 gm caster sugar
  • 2 eggs, lightly beaten
  • 395g can sweetened condensed milk
  • 40.20 gm golden syrup
  • 32.00 gm brown sugar
  • 60g butter, chopped
  • 200g Baking Milk Chocolate, chopped
  • 4.60 gm vegetable oil
  • 4.80 gm sea salt flakes
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 5cm overhang.
  • In a medium saucepan over low heat, gently melt the butter and dark chocolate together, stirring constantly for 5 minutes. Remove from heat and mix in the caster sugar. Allow to cool for 10 minutes before using.
  • Combine egg with the rich chocolate mixture, ensuring an even blend. Gently sift in the flour and stir until fully combined. Spread the decadent batter into the pan, then bake for 20 minutes. Allow to cool before indulging.
  • To make the Caramel filling, combine condensed milk, golden syrup, brown sugar, and butter in a saucepan over medium heat. Stir constantly for 10 to 12 minutes until it turns light golden. Pour the caramel over the brownie base and bake for 10 minutes. Once it is done, let it cool entirely before refrigerating for 3 hours until it sets.
  • Prepare Topping: Melt chocolate and oil together in a heatproof bowl placed over simmering water, making sure the bowl does not touch the water. Once melted, spread over the caramel, sprinkle with salt, and refrigerate until set, about 1 hour. Cut into squares and serve.
