Salted Caramel Brownie Bites

Bite-size brownie bites with caramel-salted buttercream frosting - irresistible!
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
  • 8 caramels, unwrapped
  • 1 tablespoon half-and-half
  • 6 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1/8 teaspoon kosher (coarse) salt
  • Coarse sea salt, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan) and line 32 mini muffin cups with mini paper baking cups.
  • Prepare the brownie batter following the instructions on the box for a cakelike texture. Fill each muffin cup about three-fourths full.
  • Bake the brownie bites for 18 to 21 minutes or until a toothpick inserted in the center comes out almost clean. Let them cool in the pan for 5 minutes, then transfer to a cooling rack. Allow them to cool completely, which should take about 20 minutes.
  • In a small microwave-safe bowl, heat caramels and half-and-half on High for 1 minute, stirring every 30 seconds, until smooth. Allow to cool for about 15 minutes until no longer warm.
  • In a separate small bowl, use an electric mixer to beat softened butter until fluffy. Add the melted caramel mixture and blend well. Gradually mix in 1/2 cup of powdered sugar until smooth, scraping the sides of the bowl as needed. Add the remaining 1/2 cup of powdered sugar and continue beating until the frosting is fluffy. Finish by beating in 1/8 teaspoon of kosher salt.
  • Top each brownie bite with a generous swirl of frosting and a sprinkle of coarse sea salt for the perfect finishing touch.
