Chocolate Almond Marble Cheesecake

Decadent marbled cheesecake with almond and bittersweet chocolate flavors.
Ingredients:
  • 3 cups chocolate cookie crumbs
  • 0.5 cup finely chopped almonds
  • 0.25 cup white sugar
  • 0.5 cup butter, melted
  • 3 (1 ounce) squares bittersweet chocolate
  • 2 (8 ounce) packages cream cheese, softened
  • 3 eggs
  • 1 teaspoon almond extract
  • 1 (16 ounce) container sour cream, room temperature
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together cookie crumbs, almonds, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly into the bottom and halfway up the sides of a 10-inch springform pan.
  • Melt chocolate in a double boiler until smooth, stirring occasionally. Let cool until lukewarm before using.
  • Combine cream cheese and 1 cup sugar in a large bowl, beating until smooth. Gradually add eggs. Mix in almond extract and sour cream. Transfer 1 1/2 cups of the mixture to a separate bowl. Stir in melted chocolate, then gently fold back into the plain mixture. Pour into crust and swirl with a knife to create a marbled effect.
  • Bake the cake in the preheated oven for 40 minutes. Allow the cake to cool in the closed oven for 1 hour, then let it cool to room temperature before refrigerating overnight.
