Indulgent chocolate cherry black forest trifle that's a guaranteed hit for Christmas festivities.
Ingredients:
  • 2 x 250g pkts Chocolate Mini Rolls, thinly sliced
  • 125ml brandy
  • 900g vanilla double thick custard
  • 300ml thickened cream, whipped
  • 110g cherry jam
  • Mixed berries, to serve
  • 1kg frozen pitted cherries
  • 110g caster sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground star anise
  • 10.00 gm cornflour
  • 40g almond
  • 75g caster sugar
Instructions:
  • For the spiced cherries, in a large saucepan over medium-high heat, combine cherries, sugar, cinnamon, star anise, and ½ cup (125ml) water. Cook until it boils and thickens slightly, about 5 mins. In a small bowl, mix cornflour with 2 tbs water. Stir into cherry mixture and cook for 3 mins until it thickens. Transfer to a heatproof bowl, cover with plastic wrap, and chill in the fridge for 2 hours until cold.
  • Prepare the almond praline by lining a baking tray with parchment paper. Arrange the almonds in a single layer on the tray. In a small saucepan over medium heat, melt the sugar while stirring constantly, until it turns into a golden toffee for about 5 minutes. Pour the toffee over the almonds and allow it to cool for about 20 minutes. Once cooled, roughly chop the praline.
  • Layer one-third of the roll slices on the bottom of an 8-cup (2L) glass serving dish. Drizzle with one-third of the brandy or liqueur. Spread half of the custard and cherry mixture. Repeat layering with roll slices, brandy or liqueur, custard, and cherry mixture, ending with roll slices. Finish by topping with whipped cream, cherry jam, berries, and praline.
