Chocolate and hazelnut brownies

Delicious nutty brownies, ideal for gifting.
Ingredients:
  • Melted butter, for greasing
  • Plain flour, for flouring
  • 200g (1 1/2 cups) hazelnuts
  • 250g dark cooking chocolate, broken into pieces
  • 175g butter, chopped
  • 3 eggs
  • 250g caster sugar
  • 4.40 gm vanilla essence
  • 150g (1 cup) plain flour
  • 2.00 gm baking powder
  • 1.20 gm salt
Instructions:
  • Preheat your oven to 180°C. Grease a 20 x 30cm lamington pan with melted butter and lightly coat with flour, tapping out any excess.
  • Place hazelnuts on a baking tray and toast in a preheated oven until aromatic, about 5-8 minutes. Transfer hazelnuts to a clean tea towel, rub to remove skins, and discard. Let hazelnuts cool before using.
  • Melt the chocolate and butter together in a heat-resistant bowl placed over a saucepan of simmering water, stirring until smooth and well combined.
  • In a medium mixing bowl, use electric beaters to whip the eggs and sugar until thick and creamy. Add the melted chocolate and vanilla, beat to combine. Sift flour, baking powder, and salt, gently fold into the chocolate mixture. Fold in hazelnuts. Pour into the pan and bake for 30-35 minutes. Let cool, then cut into portions. Store airtight for up to 5 days.
