Decadent chocolate mousse with roasted hazelnuts.
Ingredients:
  • 300g good-quality milk chocolate, chopped
  • 3 eggs, at room temperature, separated
  • 40.00 gm caster sugar
  • 252.50 gm thickened cream
  • 82.50 ml roasted hazelnuts, finely chopped
  • grated dark chocolate, to serve
Instructions:
  • In a large microwave-safe bowl, heat milk chocolate on MEDIUM (50%) power for 1-2 minutes, stirring every 30 seconds with a metal spoon until melted. Let it sit for 5 minutes to cool slightly.
  • Combine egg yolks with luxurious melted chocolate, stirring until the mixture is perfectly blended.
  • Using electric hand beaters, whip egg whites in a bowl until soft peaks form. Sprinkle sugar over egg whites and continue beating until thick and glossy. Fold half of the egg white mixture into the chocolate mixture using a large metal spoon until well combined. Gently fold in the remaining egg white mixture.
  • Whisk cream until soft peaks form. Gently fold in hazelnuts and chocolate mixture. Divide into twelve 1/3-cup glasses. Chill for 4 hours until set. Sprinkle with grated chocolate before serving.
