Decadent chocolate-hazelnut sauce perfect for drizzling over desserts or enjoying straight off the spoon.
Ingredients:
  • 55g (1/3 cup) hazelnuts
  • 220g (1 cup) sugar
  • 375ml (1 1/2 cups) water
  • 53.60 gm golden syrup
  • 120g (1 cup) cocoa powder, sifted
  • 15.00 gm cornflour
  • 40.00 ml chocolate hazelnut spread (like Nutella)
  • 40.00 ml hazelnut liqueur (like Frangelico)
Instructions:
  • 1. Preheat your oven to 180°C. Spread hazelnuts evenly on a baking tray and bake for 5-6 minutes until lightly toasted and fragrant. (Refer to microwave tip 1.) Gently rub the hazelnuts in a clean tea towel to remove the skins. Roughly chop and set aside.
  • In a medium saucepan, mix the sugar, 250ml (1 cup) of water, and golden syrup. Stir over medium heat until the sugar dissolves and bring to a boil. Let it cool and set aside.
  • In a heatproof bowl, mix cocoa powder and cornflour, gradually stirring in the remaining water until a paste forms. Add the sugar mixture slowly to the cocoa mixture, whisking until smooth. Pour into a pan, then mix in the chocolate hazelnut spread. Cook over medium heat for 4-6 minutes until the sauce boils and thickens. (Refer to microwave tip 2 for a quicker option.)
  • Blend in the liqueur. Let it sit off heat for 5 minutes to cool slightly. Serve warm, garnished with hazelnuts.
