Decadent chocolate puddings topped with sticky fudge sauce and crunchy nuts.
Ingredients:
  • 100g self-raising flour
  • 1.00 gm baking powder
  • 10.00 gm Dutch cocoa powder
  • 75g caster sugar
  • 26.80 gm golden syrup
  • 100ml milk
  • 80ml (1/3 cup) light olive oil
  • 40.00 ml roasted chopped hazelnuts
  • 30g unsalted butter
  • 90g good-quality dark chocolate, broken into pieces
  • 300ml thick cream
  • 20g icing sugar
  • 20ml (1 tbsp) brandy
Instructions:
  • 1. Preheat the oven to 150°C and grease four 180ml dariole moulds. 2. Sift the dry ingredients into a bowl. 3. In another bowl, mix the egg, syrup, milk, and oil together. 4. Combine the wet ingredients with the dry ones until a smooth batter forms. 5. Pour the batter into the prepared moulds, place them on a baking tray, and bake for 30 minutes.
  • In a saucepan, combine the ingredients over low heat, stirring constantly until thickened. Serve by pouring the sauce over the puddings and sprinkle with nuts for garnish.
