Chocolate & hazelnut truffles

Make festive chocolate Christmas truffles with love from your kitchen.
Ingredients:
  • 300g 70% cocoa dark chocolate, chopped
  • 125ml (1/2 cup) pouring cream
  • 100g butter, chopped
  • 40.00 ml Frangelico liqueur
  • 55g (1/3 cup) finely chopped dry-roasted hazelnuts
  • 375g White Chocolate Melts, melted
  • 375g Dark Chocolate Melts, melted
  • Silver cachous, to decorate
  • White and dark chocolate pearls (optional), to decorate
Instructions:
  • In a heatproof bowl set over simmering water, melt the chocolate with cream, stirring until smooth. Add butter and Frangelico, stirring until combined. Fold in hazelnuts. Chill the mixture for 30-40 minutes until firm.
  • Prepare 2 baking trays with non-stick baking paper. Shape heaped teaspoonfuls of chocolate mixture into balls and place them on the trays. Chill in the fridge for 30 minutes until firm.
  • Dip 1 truffle into melted white chocolate using a fork, tap off excess chocolate, and place on a tray. Repeat with half of the remaining truffles and melted white chocolate. Then repeat with the rest of the truffles and melted dark chocolate. Decorate with silver cachous, white, and dark chocolate pearls. Let them set aside.
  • Chill the truffles in a sealed container in the refrigerator for 24 hours to set. Let them sit at room temperature for 30 minutes before enjoying.
