Chocolate and Nutella s'mores cake recipe

Decadent chocolate cake with creamy Nutella frosting, fluffy meringue topping, and mini Oreo cookies. Pure indulgence!
Ingredients:
  • 200g block dark chocolate, chopped
  • 42.90 gm cocoa powder, sifted
  • 437.50 gm boiling water
  • 250g butter, softened
  • 360.00 gm firmly packed brown sugar
  • 4 eggs
  • 4.40 gm vanilla extract
  • 176.25 gm sour cream
  • 250.00 ml plain flour
  • 150.00 gm self-raising flour
  • 2.50 gm bicarbonate of soda
  • 250g cream cheese, softened
  • 220g jar Nutella spread
  • 150.00 gm pure icing sugar, sifted
  • 4 egg whites
  • Pinch cream of tartar
  • 23g packet mini chocolate Oreo cookies
Instructions:
  • Preheat your oven to 160C/140C fan-forced. Grease two 20cm round cake pans (7cm deep) and line the bases and sides with baking paper.
  • In a medium saucepan over low heat, combine chocolate, cocoa, and boiling water. Stir and cook for 2 minutes until smooth. Transfer the mixture to a bowl and let it cool for 15 minutes before using.
  • With an electric mixer, blend butter, sugar, eggs, vanilla, sour cream, flours, baking soda, and chocolate on low speed until mixed. Increase speed to medium and beat for 3 minutes until smooth and lighter in color. Evenly distribute mixture into pans and level the tops.
  • Bake for 1 hour or until a toothpick inserted in the center of each cake comes out clean. Let the cakes cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Nutella Frosting by using an electric mixer to blend cream cheese and Nutella until smooth. Mix in the sugar until well combined. Chill in the refrigerator for 1 hour until slightly firm.
  • For the S'mores topping, use an electric mixer to whip egg whites, sugar, and cream of tartar for 10 to 12 minutes until they form thick, glossy peaks and the sugar is fully dissolved. Remove the filling from 2 Oreos and finely chop the cookies.
  • Cut each cake in half horizontally to create layers. Start by placing a cake base on a serving plate and generously spread 1/3 of the delicious frosting over it. Add a second cake layer on top and repeat the process with the remaining cake and frosting, finishing with the last layer of cake.
  • Spread topping evenly over the cake and use a blow torch to caramelize it until golden brown. Garnish with the rest of the Oreos and sprinkle with cookie crumbs. Serve and enjoy!
