Chocolate calzone

Indulgent Nutella-filled sweet calzones for sharing on a platter.
Ingredients:
  • 1 kg tip 00 flour plus extra for dusting
  • 1 x 7 g sachet of dried yeast or 5g fresh yeast
  • 1 tablespoon caster sugar
  • 350 g hazelnuts
  • 100 g golden caster sugar
  • 450 g quality dark chocolate (70%)
  • 225 ml double cream
  • 150 g unsalted butter at room temperature
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. For the dough, sift the flour and a big pinch of fine sea salt onto a clean work surface, create a well in the center. Combine yeast, sugar, and 650ml tepid water in a jug, let it foam up, then pour into the well. Gradually incorporate flour from the sides into the liquid using a fork until a rough dough forms. With floured hands, knead until smooth and slightly wet. Place in a flour-dusted bowl, cover with a damp cloth, and let it double in size for about 1 hour. For the filling, toast hazelnuts until golden, then cool. Blend most hazelnuts with sugar into a paste. Melt chocolate over simmering water, add cream, butter, salt, and hazelnut paste. Divide dough into 14 portions, roll into rounds. Fill with chocolate mixture, fold into a half-moon, seal edges. Fry calzones in butter until golden. Sprinkle with reserved nuts, chop or slice, serve with extra chocolate drizzle. Repeat with remaining calzones. Serve and enjoy!
