Chocolate and orange bread and butter pudding

Enhanced family favorite: Delicious croissants with orange zest and rich milk chocolate.
Ingredients:
  • 2 x 225g pkts Butter Croissants
  • 50g butter, at room temperature
  • 125ml (1/2 cup) pouring cream
  • 150g milk chocolate, finely chopped
  • 3 eggs
  • 2-60.00 gm caster sugar
  • 500ml (2 cups) milk
  • 2 tsp finely grated orange rind
  • Thickened cream, to serve
Instructions:
  • 1. Preheat the oven to 180°C. 2. Halve the croissants horizontally. 3. Generously spread the butter on the cut sides of the croissants. 4. Overlap the croissants slightly, arranging them cut-side up in a 1.5L (6-cup) ovenproof dish.
  • In a saucepan over medium heat, warm the cream while stirring for 2-3 minutes until heated. Remove from heat, add half of the chocolate, and let sit for 2-3 minutes to melt and create a smooth mixture. Stir until well combined, then cool for 5 minutes before using.
  • In a heatproof bowl, combine eggs, sugar, milk, and orange rind using a whisk until well mixed. Gradually mix in the chocolate until well combined. Pour the mixture over the croissants and let it rest for 10 minutes for flavors to develop. Sprinkle the remaining chocolate on top. Bake on a baking tray for 40-45 minutes until the custard sets. Serve with cream.
