Indulge in irresistible peanut butter chocolate cookies with a cozy cup of coffee.
Ingredients:
  • 200g softened butter
  • 150g brown sugar
  • 110g caster sugar
  • 4.00 gm baking powder
  • 300g plain flour
  • 50g rice flour
  • 25g milk powder
  • 95g peanut butter
  • 100g milk chocolate, melted
Instructions:
  • Preheat the oven to 180°C and line two oven trays with baking paper. Cream together the butter and sugars until light and fluffy, then mix in the egg and baking powder until well combined.
  • Combine the flours and milk powder until they start sticking together. Use your hands to mix until it looks like breadcrumbs, then divide the mixture in half by transferring one portion to a different bowl.
  • Blend creamy peanut butter into one bowl and incorporate cooled melted chocolate into the other bowl. Knead both mixtures until they are silky and combined. Divide each mixture in half and keep them covered. Take one portion of each mixture, and roll them out separately on a lightly floured baking sheet to form a rectangle measuring 22cm x 27cm.
  • Gently place the chocolate on top of the peanut dough and peel off the paper. Roll up from the shortest end using the paper as a guide. Chill for 20 minutes. Repeat with the rest of the dough. Once firm, slice into 1cm pieces. Arrange on baking trays with space in between. Bake for 10-15 minutes. Allow to cool before storing in an airtight container for up to 1 week.
