Chocolate Beet Cake

Indulgent chocolate cake made magically moist and dense with the addition of fresh beets - a truly earthy delight!
Ingredients:
  • 3 medium beets
  • 1 cup butter
  • 4 (1 ounce) squares unsweetened chocolate
  • 1.5 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 tablespoon baking soda
  • 1.5 cups white sugar
  • 1 cup bittersweet chocolate chips
Instructions:
  • In a pot, simmer beets with enough water to cover until tender, about 30 minutes. Peel and blend the beets into a smooth puree using a blender or food processor.
  • Preheat the oven to 375°F (190°C) and generously butter a 9x13-inch baking pan.
  • In a saucepan over low heat, melt the butter. Add the unsweetened chocolate and stir until melted. Allow the mixture to cool.
  • In a small bowl, mix all-purpose flour, whole wheat flour, baking soda, and salt together.
  • In a large bowl, use an electric mixer to beat sugar and eggs until creamy. Add melted chocolate, beets, and vanilla extract, then beat until combined.
  • Gently fold the flour mixture and chocolate chips into the beet mixture until just incorporated. Transfer the batter into the prepared pan.
  • Bake in the oven until a fork comes out clean when inserted in the center, approximately 40 minutes.
