Indulge in a decadent dark chocolate beet cake, a delicious twist on classic chocolate cake with hidden veggies for added nutrition.
Ingredients:
  • 1 (15 ounce) can sliced beets, drained
  • 2 large eggs
  • 2.25 cups all-purpose flour
  • 0.5 cup unsweetened dark cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cup salted butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease the bottom of a 10-inch round cake pan.
  • Blend beets in a food processor or blender until smooth. Then add eggs and blend briefly.
  • Combine flour, sugar, cocoa, baking powder, and baking soda with an electric mixer in a separate bowl. Add butter and mix well. Slowly incorporate beet puree on low speed. Transfer batter to the prepared pan.
  • Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 5 to 10 minutes, then invert onto a wire rack to cool completely.
