Indulge in a nostalgic Aussie classic: rich chocolate and refreshing peppermint slice.
Ingredients:
  • 250.00 ml flour
  • 10.00 gm Cocoa
  • 90.00 gm brown sugar
  • 42.50 gm desiccated coconut
  • 125g butter, melted
  • 41.20 gm milk
  • 20g butter, extra
  • 337.50 gm icing sugar, sifted
  • Peppermint essence, to taste
  • 125g Dark Chocolate Melts
  • 90g butter, extra, chopped
Instructions:
  • In a bowl, combine sifted flour and cocoa, then mix in sugar and coconut. Add melted butter and stir well. Press mixture into the base of a greased and lined 28cm x 18cm slice pan (line with paper extending 5cm above the pan). Bake at 180°C for 15-20 minutes until golden brown.
  • In a saucepan, gently melt the 20g extra butter with the milk. Mix in the icing sugar and peppermint essence until smooth. Spread the mixture over the base, level the top, and refrigerate until firm.
  • Melt 90g of butter and chocolate together in a bowl over simmering water. Spread over slice and chill until set. Store in an airtight container in the fridge until needed. Cut into thin rectangles and serve at room temperature.
