Chocolate biscuit pudding

Ingredients:
  • 250g dark cooking chocolate
  • 5-120.00 gm caster sugar
  • 100g butter, straight out of the fridge, cubed
  • 4.40 gm vanilla essence
  • 250ml thickened cream
  • 30-35 Marie biscuits
  • 150ml milk
  • 30g cashews, chopped, for garnish
  • Dark chocolate, grated, for ganish
Instructions:
  • Melt the chocolate using a double boiler and allow it to cool completely.
  • Whisk together egg yolks and sugar until smooth. Adjust sugar based on chocolate darkness. Slowly incorporate butter one cube at a time, mixing well. Stir in vanilla extract.
  • Gently fold in the cooled chocolate until it's perfectly blended with the egg and butter mixture.
  • Whisk the cream in a separate bowl until soft peaks form, then gently fold it into the chocolate mixture, being careful not to overmix.
  • Dunk the Marie biscuits in milk, one batch at a time, and top each layer with chocolate cream. Be careful not to soak them too much to maintain their shape. Aim for a soft texture, not crunchy. Repeat layering until your dish is filled. End with a final chocolate cream layer. Sprinkle chopped cashews and grated chocolate for garnish.
