Indulgent milk chocolate treats with a crunchy biscuit layer and fluffy meringue topping.
Ingredients:
  • 100g milk chocolate, finely chopped
  • 60ml (1/4 cup) thickened cream
  • 8 McVitie’s Digestive biscuits
  • 1 egg white
  • 55g (1/4 cup) caster sugar
Instructions:
  • Combine the chocolate and cream in a small saucepan over medium heat, stirring for 1-2 minutes until smooth. Transfer the mixture to a small bowl and let it cool slightly before using.
  • Crush the biscuits in a large bowl with clean hands until they resemble fine breadcrumbs. Divide the crushed biscuits between four 185ml (3/4 cup) heatproof dishes and top with the chocolate mixture.
  • Whip the egg white with an electric beater in a clean, dry bowl until stiff peaks form. Slowly add the sugar while constantly whisking until the mixture is thick and glossy. Distribute the mixture evenly among the dishes and level the top.
  • Preheat the grill to medium heat. Arrange the dishes on a baking tray and toast under the grill for 1-2 minutes until lightly browned. Allow them to cool for 2 minutes before serving.
