Chocolate biscuits with soft chocolate centres

Irresistible chocolate cookies loved by all ages.
Ingredients:
  • 140 g butter
  • 140 g caster sugar
  • 2 free-range egg yolks
  • 255 g self-raising flour
  • 30 g cocoa powder
  • 30 squares good-quality chocolate (milk, white or plain)
Instructions:
  • After preparing the dough, roll out about a third of it thinly on a lightly floured surface. Use a 4cm cutter to cut out around 30 circles. Place them on a greased baking sheet and add a square of chocolate in the center of each one. Roll out the remaining dough, cut out the same number of circles with a 5cm cutter, and place them on top of the chocolate, sealing the edges gently to prevent chocolate leakage. Bake in a preheated oven at 190ºC/375ºF/gas 5 for 10 minutes. Enjoy the biscuits hot or cold.
