Sugar free hazelnut and chocolate orange biscuits

Healthier chocolate biscuits with a zesty touch of orange.
Ingredients:
  • 250g hazelnuts
  • 50g butter, at room temperature
  • 1 egg
  • 1 egg white
  • 1 1/2 tsp orange rind
  • 1 tsp vanilla bean paste
  • 75g no-added-sugar chocolate, melted
Instructions:
  • Pulse hazelnuts until ground and slightly sticky. Add butter, egg, egg white, lemon zest, and vanilla. Pulse until well combined.
  • Place the mixture on a sheet of baking paper and use a rolling pin to flatten it to a 6mm thickness between 2 sheets of baking paper. Freeze for 2 hours.
  • Preheat the oven to 190C or 170C fan-forced. Line a large baking tray with baking paper. Cut out 5cm circles from the dough and place them on the tray. If the dough gets too sticky, chill it in the freezer. Re-roll any scraps to make more biscuits. Bake for 12-15 minutes until lightly golden. Let them cool on the tray.
  • Drizzle the mixture with luscious chocolate and allow it to rest until the chocolate solidifies.
