Indulge in a delightful free-form apple pie with golden pastry and warm, soft apples.
Ingredients:
  • 300g (2 cups) plain flour
  • 45g (1/4 cup) icing sugar
  • 125g butter, chilled, cubed
  • 1 egg, at room temperature
  • 10.00 gm caster sugar
  • Vanilla ice-cream or double cream, to serve
  • 100g hazelnuts
  • 40.00 ml apricot jam
  • 300g Granny Smith apples, quartered, cored, thinly sliced
  • 1.25 gm ground cinnamon
Instructions:
  • Preheat the oven to 200°C. Combine flour, icing sugar, and butter in a food processor until it looks like fine bread crumbs. Add the egg and water, and process until dough forms. Shape the pastry into a ball on a floured surface, flatten into a disc, wrap in plastic, and chill in the fridge for 10 minutes.
  • Spread hazelnuts on a baking tray and toast in a preheated oven until light golden. Rub hazelnuts between a clean tea towel to remove skins. Combine hazelnuts and jam in a food processor, then pulse until nuts are finely chopped.
  • Prepare a large sheet of non-stick baking paper to line a tray. Roll out the pastry to a 5mm-thick, 30cm-wide circle on the paper and dust with flour. Leave a 8cm border and spread the hazelnut mixture, then arrange the apple slices and sprinkle with cinnamon. Gently fold the edges of the pastry, keeping the center open. Transfer the pie with the paper onto the tray and sprinkle with caster sugar.
  • Bake until pastry is golden and crisp, and apples are tender, for 25-30 minutes in a preheated oven. Serve with ice cream or cream.
