Upgrade classic treacle tart with a rustic apple galette for a perfect winter treat.
Ingredients:
  • 190g (1 1/4 cups) plain flour
  • 100g butter, chilled, chopped
  • 12.00 gm pure icing sugar
  • 1 egg yolk
  • 30.00 gm iced water
  • 2.00 egg, lightly whisked
  • Whipped cream, to serve
  • Chopped toasted walnuts, to serve
  • Golden syrup, to serve
  • 125ml (1/2 cup) golden syrup
  • 20g butter
  • 21.00 gm fresh lemon juice
  • 2 tsp finely grated lemon rind
  • 140g (2 cups) day-old white sourdough breadcrumbs
  • 1.25 gm ground ginger
  • 2 red apples, quartered, cored, thinly sliced
Instructions:
  • Preheat the oven to 180C/160C fan forced. In a small saucepan, combine golden syrup, butter, lemon juice, and rind. Cook over low heat, stirring, for 3-5 minutes until smooth. Transfer the mixture to a large bowl and let it cool to room temperature.
  • In a food processor, combine flour, butter, and icing sugar until mixture resembles fine crumbs. Add egg yolk, water, and vanilla and process until the mixture clumps together. Shape the dough into a disc on a clean work surface, then transfer to a sheet of baking paper. Roll into a 28cm-diameter disc. If sticky, lightly dust with plain flour. Transfer dough on the paper to a large baking tray.
  • Blend the egg into the golden syrup mixture. Add the breadcrumbs and ginger, combining them thoroughly. Spread the mixture onto the center of the dough, keeping a 6cm border. Place apple slices on top. Fold the pastry over the filling, ensuring to seal the edges. Brush the pastry with the remaining egg. Bake until golden for 30-35 minutes. Finish the tart with cream, walnuts, and a drizzle of golden syrup before serving.
