Free-form apple pie

Savor guilt-free, healthy apple pie with minimal effort.
Ingredients:
  • 320g plain flour
  • 80g low-fat margarine
  • 125ml apple juice
  • 3 Granny Smith apples, quartered, core removed
  • Large pinch ground cinnamon
  • 8.60 gm demerara sugar
  • Low-fat vanilla ice-cream, to serve
Instructions:
  • Combine flour and margarine in a food processor until fine crumbs form. Add apple juice and pulse until mixture forms a dough. Lightly knead the dough, then roll it out into a 30cm circle on a non-stick baking paper. Transfer to a baking tray and chill in the refrigerator for 15 minutes.
  • Preheat your oven to 180°C. Cut each apple quarter into four wedges and place them in a large bowl. Sprinkle cinnamon over the apples and mix well to evenly coat them.
  • Arrange the apples at the center of the pastry, leaving a 7cm border. Sprinkle with demerara sugar. Fold the pastry edges to partially cover the apples. Bake for 40-45 minutes. Enjoy with a scoop of ice cream.
