Ingredients:
  • 500.00 ml plain flour
  • 125g butter, cut into cubes, chilled
  • 4.40 gm vanilla essence
  • 1 egg
  • 125.00 ml ground hazelnuts
  • 2 x 400g cans of plums, well drained, halved, stones removed
  • 1 eggwhite, beaten
  • 20.00 gm caster sugar
Instructions:
  • Start by preheating your oven to 200°C. Next, line a baking tray with parchment paper. Then, in a food processor, blend together flour, icing sugar, butter, and vanilla until it forms fine breadcrumbs. Add the egg and process until a soft pastry dough forms, adding iced water if necessary.
  • Discard the pastry and gently knead it until smooth. Shape it into a 2cm-thick disc, wrap it in greaseproof paper, and let it rest in the fridge for 30 minutes.
  • Roll out the pastry into a 30cm circle and place it on a baking tray. Sprinkle the nuts over the pastry, leaving a 3cm border. Arrange the plums on top. Fold the pastry over the plums, leaving half of them exposed. Brush the pastry border with egg white and sprinkle caster sugar over the top.
  • Bake until golden brown, about 30-35 minutes. Enjoy with a scoop of ice cream, if desired.
