Indulgent chocolate cake with rich whipped filling.
Ingredients:
  • 200g good-quality dark chocolate, roughly chopped
  • 250g unsalted butter, softened
  • 330g caster sugar
  • 4.40 gm vanilla extract
  • 4 eggs
  • 300g plain flour
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 50.00 gm almond meal
  • 42.90 gm Cocoa Powder, sifted
Instructions:
  • Preheat the oven to 160°C while you prepare a 23cm springform cake pan by greasing and lining it.
  • Melt chocolate and 60g of butter in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir occasionally until smooth, then let it cool.
  • Cream together the sugar and remaining butter in an electric mixer until light and fluffy. Mix in the vanilla extract. Add eggs one at a time, beating well after each addition. Finally, mix in the cooled chocolate mixture.
  • Combine flour, baking powder, bicarbonate, and almond meal in one bowl. In a separate bowl, mix cocoa powder and 2/3 cup (160ml) boiling water. Gradually fold dry ingredients into chocolate mixture, alternating with cocoa mixture, until fully combined.
  • Transfer the mixture into the pan lined with parchment paper and bake for 1 hour or until a skewer comes out clean. Let it cool briefly, then remove the pan collar and cool completely.
  • To assemble the cake, slice horizontally into 3 layers. Place the bottom layer on a serving plate, spread with half the whipped chocolate filling, add the middle layer, and spread with the rest of the filling. Top with the final slice, and pour over the glaze, letting it drip down the sides. Set for 30 minutes before slicing.
