Indulgent chocolate cake with rich ganache topping perfect for any occasion.
Ingredients:
  • 250g butter, chopped
  • 400.00g Baking Dark Chocolate, chopped
  • 430.00 gm caster sugar
  • 250.00 gm cold water
  • 2 eggs, lightly beaten
  • 150.00 gm self-raising flour, sifted
  • 375.00 ml plain flour, sifted
  • 32.50 gm cocoa powder, sifted
  • chocolate flakes, to serve
  • 166.65 gm thickened cream
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, then generously grease a 6cm-deep, 22cm round cake pan and line it with baking paper on the base and sides.
  • In a large saucepan over medium-low heat, melt butter. Stir in chocolate, sugar, and 1 cup of cold water. Cook and stir constantly for 3 to 4 minutes until smooth. Transfer mixture to a large bowl and let it cool for 10 minutes before using.
  • Crack the eggs into the mixture and stir well until combined. Then, add the flours and cocoa and stir until the batter is smooth. Pour the batter into the prepared pan. Bake for 1 hour and 30 minutes, or until a skewer inserted in the center comes out with moist crumbs. Let it rest in the pan for 10 minutes before turning it out onto a wire rack to cool.
  • Prepare the chocolate ganache by combining chocolate and cream in a small saucepan over medium-low heat. Stir constantly for 3 to 4 minutes until smooth. Transfer the mixture to a bowl and refrigerate for 30 minutes until it thickens. Spread the ganache over the cake, sprinkle with chocolate flakes, let it sit for 10 minutes until the ganache sets, then serve.
