Indulgent chocolate cake with rich cream and flaky topping for hardcore chocoholics.
Ingredients:
  • 200g good-quality dark chocolate, roughly chopped
  • 175g unsalted butter
  • 175g caster sugar
  • 4 eggs
  • 150g self-raising flour
  • 100g almond meal
  • 4.00 gm baking powder, sifted
  • 125ml milk
  • 2 Flake chocolate bars, crumbled
  • 300ml thick cream
  • 150g good-quality dark chocolate, roughly chopped
Instructions:
  • Preheat your oven to 160°C and generously grease and line a 20cm springform cake pan for effortless cake release.
  • Melt chocolate in a heatproof bowl over gently simmering water, ensuring the bowl doesn't touch the water.
  • Combine the ingredients and whisk until the mixture is smooth, then let it cool.
  • In a bowl, combine butter and sugar, then beat with an electric mixer until pale, approximately 5 minutes. Add eggs one at a time, beating well after each addition. Gently fold in flour, almond meal, baking powder, milk, and melted chocolate.
  • Transfer the mixture to a cake pan and bake for 45 minutes, or until a skewer inserted in the center comes out clean. Let it cool briefly, then invert onto a rack to cool completely.
  • Heat cream gently and swirl in rich chocolate until smooth. Let cool in the fridge for 15 minutes until luxuriously thick yet delightfully soft.
  • Spread a luscious layer of cream on the cooled cake and generously sprinkle Flake bars on top for a delightful finishing touch.
