Indulge in rich chocolate cappuccino cookies for a delightful treat.
Ingredients:
  • 2 cups butter or margarine, softened
  • 4 cups packed light brown sugar
  • 4 eggs
  • 5 1/2 cups Gold Medal™ all-purpose flour
  • 1 cup unsweetened baking cocoa
  • 1/4 cup instant coffee granules or crystals
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 bag (10 oz) cinnamon-flavored baking chips
Instructions:
  • Preheat oven to 350°F and lightly coat cookie sheets with cooking spray.
  • In a large bowl, use an electric mixer on medium speed to whip the butter until creamy. Slowly incorporate the brown sugar, continuing to beat well. Add the eggs and beat until fully blended.
  • In a separate large bowl, combine flour, cocoa, coffee granules, baking powder, baking soda, and salt. Add this mixture gradually to the butter blend while beating on low speed until combined. Fold in the cinnamon chips. Drop rounded tablespoonfuls of dough onto cookie sheets, spacing them 2 inches apart.
  • Bake for 8 to 10 minutes until golden brown. Let cool for 5 minutes, then transfer to cooling racks.
