Impress your guests with a show-stopping special occasion cake!
Ingredients:
  • 2 x 370g packets moist chocolate cake or 2 quantities Homemade chocolate cake (see related recipe)
  • 3 x 200g blocks dark chocolate, chopped
  • 419.15 gm thickened cream
  • 2 x 180g blocks white chocolate, chopped
  • 22 dark chocolate balls
  • 12 white chocolate balls
  • 18 Ferrero Rocher chocolate balls
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease two 7cm-deep, 20cm round cake pans and line the bases and sides with baking paper.
  • Follow the instructions on the packet mix or prepare homemade cakes as instructed in the related recipe. Divide the batter evenly between the prepared pans. Bake for 45 minutes or until fully cooked. Let the cakes cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
  • Combine dark chocolate and 1 cup of cream in a microwave-safe bowl. Microwave on medium power for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth. Transfer 3/4 cup of the chocolate mixture to a separate bowl and refrigerate until thickened. Keep the remaining mixture at room temperature for later use.
  • Combine white chocolate and remaining cream in a microwave-safe glass or ceramic bowl. Microwave on medium (50%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until smooth. Chill in the refrigerator until thickened.
  • 1. Using a serrated knife, even out the tops of the cakes if needed. 2. Carefully slice each cake horizontally in half. 3. Begin by placing the bottom half of one cake on a cake board. 4. Spread half of the white chocolate mixture over the cake layer. 5. Add the second cake layer on top and spread the chilled dark chocolate mixture evenly. 6. Place another cake layer on top and spread the remaining white chocolate mixture. 7. Finish by adding the remaining cake half and spread the remaining dark chocolate mixture over the top and sides of the cake. 8. Garnish with chocolate balls for an elegant touch. 9. Serve and enjoy!
