Chocolate Chip Cheesecake Swirl Cupcakes

Chocolate chip cheesecake bites - perfect for potlucks and picnics!
Ingredients:
  • 1/2 cup sugar
  • 2 packages (3 oz each) cream cheese, softened
  • 1 egg
  • 1 bag (6 oz) semisweet chocolate chips (1 cup)
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 2/3 cups sugar
  • 1/4 cup baking cocoa
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 2 tablespoons white vinegar
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 1 teaspoon salt
Instructions:
  • - Preheat the oven to 350°F and prepare 24 regular-size muffin cups with paper baking cups. - In a medium bowl, use an electric mixer on medium speed to blend 1/2 cup of sugar with the cream cheese until smooth. - Incorporate the egg and then gently mix in the chocolate chips before setting the bowl aside.
  • In a large bowl, mix the remaining ingredients on low speed for 30 seconds, scraping the bowl occasionally. Increase the speed to high and beat for 3 minutes, scraping the bowl occasionally. Set aside 1 1/2 cups of the batter.
  • Fill each muffin cup one-third full with batter, spoon cream cheese mixture on top, and cover with remaining batter.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Chill in the refrigerator before serving.
