Delicious chocolate chip and coconut granola bars packed with dates, nuts, and seeds - perfect for snacking on the go or in lunchboxes.
Ingredients:
  • 12 ounces dates, pitted
  • 0.25 cup water, or as needed
  • 3 cups rolled oats
  • 2 cups unsweetened shredded coconut
  • 2 cups miniature chocolate chips
  • 1.5 cups whole raw almonds
  • 0.66666668653488 cup pumpkin seeds
  • 0.5 cup salted sunflower seeds
  • 1 tablespoon ground cinnamon
  • 1 cup almond butter
  • 1 cup unsweetened applesauce
Instructions:
  • Place a sheet of waxed paper in a 9x13-inch baking dish, allowing the paper to hang over the edges.
  • In a food processor or blender, blend dates and water until a smooth paste forms, adding additional water as necessary to reach desired consistency.
  • In a big bowl, mix oats, coconut, chocolate chips, almonds, pumpkin seeds, sunflower seeds, and cinnamon. Include date paste, almond butter, applesauce, and vanilla extract. Use your hands to mix until everything is well combined.
  • Press the mixture firmly into the baking dish, then cover with waxed paper and compact it using a can or mini roller. Freeze for 1 hour.
  • Take the dish out of the freezer and lift the contents using the edges of the waxed paper. Cut into 25 squares.
