Delicious chocolate chip coconut cookies perfect for a satisfying on-the-go snack.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup sweetened flaked coconut
  • 1 cup chocolate chips
  • 0.5 cup quick-cooking oats
  • 0.5 cup roasted sunflower seeds
  • 1 cup white sugar
  • 0.5 cup butter, softened
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a large baking sheet.
  • In a bowl, whisk together flour, baking powder, and baking soda. In another bowl, mix coconut, chocolate chips, oats, and sunflower seeds.
  • Combine sugar and butter in a separate bowl, using a spoon to mix until a smooth paste forms. Gradually beat in eggs, one at a time, with an electric mixer on medium speed until the mixture is light and creamy.
  • Combine coconut mixture with creamed butter, beating until evenly combined. Mix in flour mixture until dough is just combined. Drop small spoonfuls of dough onto prepared baking sheet.
  • Bake the cookies in the preheated oven until they are lightly browned, approximately 10 minutes. Then, transfer them to a wire rack to cool completely.
