Easy raspberry jam chocolate bars - a sweet surprise in every bite!
Ingredients:
  • 2/3 cup butter, softened
  • 1/3 cup sugar
  • 1 teaspoon almond extract
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup miniature semisweet chocolate chips
  • 1/2 cup seedless raspberry jam
  • 1/3 cup miniature semisweet chocolate chips
  • 1 teaspoon shortening
Instructions:
  • Preheat oven to 350°F. In a large bowl, cream together butter and sugar until light and fluffy. Mix in almond extract and egg until well combined. Add flour and baking powder, and mix until smooth. Fold in 1/2 cup of chocolate chips.
  • Separate the dough into 4 equal portions. Shape each portion into a 12-inch roll on a lightly floured surface. Space the rolls about 3 inches apart on 2 ungreased cookie sheets. Use the handle of a wooden spoon or your finger to create a 1/2 inch wide and 1/4 inch deep groove lengthwise down the center of each roll. Fill each groove with 2 tablespoons of jam.
  • Preheat oven to 350°F. Bake for 15 to 20 minutes until light golden brown, rotating the cookie sheets halfway through. Allow it to cool for 5 minutes. Slice each roll diagonally into 12 cookies and place them on wire racks. Cool for another 10 minutes until fully cooled.
  • Combine icing ingredients in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until chocolate is smooth. Drizzle over cooled cookies and allow icing to set before storing in a loosely covered container.
