Chocolate coconut and turkish delight truffles

Easy gourmet truffles, ideal for any celebration.
Ingredients:
  • 20g (1/4 cup) desiccated coconut
  • 300g good quality dark chocolate, coarsely chopped
  • 125ml (1/2 cup) thickened cream
  • 2 55g Turkish Delight chocolate bars (Fry's brand), finely chopped
  • 250g milk chocolate melts
Instructions:
  • Toast the coconut in a small frying pan over medium heat, stirring frequently, for 3 minutes or until it turns golden brown and becomes aromatic. Set aside.
  • In a heatproof bowl set over simmering water, melt the chocolate with cream, stirring occasionally until smooth. Remove from heat, then mix in coconut and chocolate bars. Chill covered for 6 hours until firm, then roll into balls.
  • Prepare two trays lined with non-stick baking paper. Scoop out 1 1/2 teaspoons of the chocolate mixture using a melon baller or teaspoon, then roll into balls with your hands. Arrange the balls on the trays and chill in the freezer for 10 minutes until firm.
  • In a heatproof bowl, melt milk chocolate melts over simmering water, stirring with a metal spoon until smooth, about 5 minutes. (Refer to microwave tip 3 if needed.) Remove from heat.
  • Dip each truffle in the melted chocolate using 2 forks. Tap the fork gently to remove excess chocolate. Use a spatula to transfer the truffle to the tray. Repeat for the rest. Let the truffles sit at room temperature for 5-10 minutes until set.
