Indulgent coconut and chocolate bars crafted with Betty Crocker™ cake mix, a delectable treat for any sweet tooth.
Ingredients:
  • 1 cup flaked coconut
  • 1 box Betty Crocker™ Delights Super Moist™ Dark Chocolate Cake Mix
  • 1/2 cup butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 2 eggs
  • 1/4 teaspoon coconut extract
  • 1 box (1 lb) powdered sugar
  • 1/3 cup unblanched whole almonds, chopped
Instructions:
  • Preheat the oven to 350°F. Evenly spread coconut on an ungreased shallow pan. Bake for 5 to 7 minutes, stirring occasionally, until the coconut turns golden brown.
  • Prepare a 13x9-inch pan with cooking spray. In a large bowl, mix cake mix, egg, and 1/2 cup butter with an electric mixer on medium speed until well combined. Stir in toasted coconut. Press the mixture evenly into the bottom of the pan.
  • In a large bowl, use an electric mixer to beat cream cheese until smooth. Mix in eggs, coconut extract, and 1/2 cup butter until smooth. Gradually add powdered sugar and beat until well blended. Spread the cream cheese mixture over the batter and sprinkle with almonds.
  • Bake for 40 minutes or until just set, leaving the center slightly gooey. Let it cool completely in the pan on a cooling rack before cutting it into 6 rows by 4 rows. Store the leftovers covered in the refrigerator.
