Gooey chocolate coconut brownies

Irresistible chocolate brownies perfect for picnics or morning teas.
Ingredients:
  • 150g butter, chopped
  • 220g brown sugar
  • 200g dark chocolate (70% cocoa), chopped
  • 20.00 ml Malibu liqueur
  • 4 eggs
  • 75g (1/2 cup) plain flour
  • 35g (1/3 cup) cocoa powder
  • 13.60 gm desiccated coconut
  • 195g (3 cups) shredded coconut
  • 395g can sweetened condensed milk
  • 80g dark chocolate, melted, to drizzle
Instructions:
  • Preheat the oven to 180C (160C fan forced). Grease and line a Wiltshire 2-toned Slice & Brownie Pan with baking paper, leaving an overhang on the sides.
  • Combine butter, sugar, dark chocolate, and Malibu in a saucepan over medium-low heat. Stir continuously for 5 minutes until melted. Transfer the mixture to a bowl. Lightly whisk 3 eggs in a separate container, then add to the chocolate mixture and mix well.
  • Sift the flour and cocoa over the chocolate mixture, then add desiccated coconut and stir until combined. Pour the mixture into the prepared pan and bake for 20 minutes. Allow to cool for 15 minutes before serving.
  • In a bowl, mix together shredded coconut, condensed milk, and the remaining egg. Spread the mixture over the brownies and use a palette knife to create a smooth surface. Bake for 20-25 minutes until golden and firm. Allow to cool completely in the pan, then cut into squares and drizzle with melted chocolate. Let it set before serving.
