Chocolate Cookie Sandwiches with Rainbow Chip Frosting

Homage to classic chocolate sandwich cookies, upgraded with Rainbow Chip frosting filling!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 3 tablespoons unsweetened baking cocoa
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 1 tub (16 oz) Betty Crocker™ Original Rainbow Chip Frosting
Instructions:
  • Preheat the oven to 350°F and prepare 2 cookie sheets with parchment paper; set aside.
  • Combine the cookie mix and cocoa in a medium bowl. Mix in the melted butter and egg until a soft pale brown dough forms.
  • Roll the dough to 1/4 inch thick on a floured surface. Cut out circles using a 1 1/2-inch round cutter for the cookie sandwiches and place them 1 inch apart on cookie sheets.
  • Bake for 8 minutes, then cool completely on a rack.
  • Spread a dollop of frosting on one cookie and press another cookie on top to make a sandwich. Repeat with remaining cookies.
