Oatmeal Cream Pies with Chocolate

Decadent homemade treat: oatmeal-chocolate chip cookie sandwiches with fluffy marshmallow filling.
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup light brown sugar
  • 0.5 cup white sugar
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract
  • 1.5 cups quick-cooking oats
  • 0.75 cup all-purpose flour
  • 2 tablespoons cocoa powder, sifted
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon kosher salt
  • 0.5 cup mini chocolate chips
  • 1 (4 ounce) package cream cheese, softened
  • 0.5 cup vegetable shortening
  • 1 cup marshmallow cream (such as Marshmallow Fluff®)
  • 2 teaspoons whole milk
  • 0.5 teaspoon vanilla extract
  • 2 cups confectioners' sugar, or more as needed
Instructions:
  • In a large bowl, mix butter, brown sugar, and white sugar until smooth and creamy using an electric mixer for 3 to 5 minutes. Add egg, 1 tablespoon of milk, and 1 teaspoon of vanilla extract and continue beating.
  • Combine oats, flour, cocoa powder, cinnamon, baking soda, baking powder, and salt in a separate bowl. Gradually mix into the creamed butter on low speed, then gently fold in chocolate chips with a rubber spatula.
  • Chill dough in the refrigerator, covered with plastic wrap, until firm enough to scoop, for at least 1 hour.
  • Preheat the oven to 375°F (190°C) and prepare 2 baking sheets with parchment paper.
  • Use a small cookie scoop to elegantly portion and place dough balls on lined baking sheets.
  • Bake in the preheated oven until golden for about 10 minutes. Allow cookies to rest on the baking sheets for 2 minutes, then move to a wire rack to cool completely.
  • In a bowl, blend cream cheese and vegetable shortening until smooth using an electric mixer. Mix in marshmallow cream, 2 teaspoons milk, and 1/2 teaspoon vanilla extract until well combined. Gradually beat in confectioners' sugar until filling is thick.
  • Using the cookie scoop, generously fill one cookie and sandwich it with another. Repeat with the rest of the cookies and filling.
