Delicious oatmeal whoopie pies with soft cookies and creamy vanilla filling.
Ingredients:
  • 2 cups packed brown sugar
  • 0.75 cup unsalted butter, softened
  • 2 large eggs
  • 2.5 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 tablespoons boiling water
  • 2 cups quick cooking oats
  • 2 cups confectioners' sugar
  • 1 large egg white, beaten
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 0.75 cup shortening
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease 2 baking sheets.
  • In a large bowl, cream together brown sugar and butter until light and fluffy using an electric mixer. Mix in the eggs until well combined.
  • Combine flour, cinnamon, baking powder, baking soda, and salt in a separate bowl. Gradually incorporate half of the flour mixture into the wet ingredients, followed by half of the boiling water, mixing well after each addition. Repeat with the remaining flour mixture and boiling water, ensuring thorough mixing. Finally, fold in oats.
  • Scoop dough onto baking sheets, spacing them 2 inches apart.
  • Bake in the hot oven for 10 to 12 minutes, moving trays halfway through. Take out, then cool on wire racks.
  • While the cookies cool, prepare the filling by combining 1 cup confectioners' sugar, egg white, milk, and vanilla until mixed. Then add shortening and remaining 1 cup confectioners' sugar, beating until creamy and light.
  • Spread the delicious filling onto half of the cookies that have cooled and create scrumptious sandwiches with the remaining cookies.
