Coconut maple oat pie: A nut-free twist on classic pecan pie, sweetened with maple syrup.
Ingredients:
  • 1 cup quick-cooking oats
  • 2 tablespoons quick-cooking oats
  • 1 cup coconut flakes
  • 2 tablespoons coconut flakes
  • 0.75 cup white sugar
  • 0.5 cup corn syrup
  • 1 tablespoon corn syrup
  • 0.5 cup maple syrup
  • 1 tablespoon maple syrup
  • 3 eggs
  • 6 tablespoons milk
  • 6 tablespoons butter, melted
  • 1.5 teaspoons vanilla extract
  • 1 (9 inch) unbaked pie shell
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect bake.
  • In a large bowl, mix together 1 cup plus 2 tablespoons quick-cooking oats, 1 cup plus 2 tablespoons coconut flakes, sugar, 1/2 cup plus 1 tablespoon corn syrup, 1/2 cup plus 1 tablespoon maple syrup, eggs, milk, butter, and vanilla extract until smooth using an electric mixer.
  • Add the oat mixture to the pie shell.
  • Bake in a preheated oven until the crust turns golden, approximately 15 minutes. Lower the oven temperature to 325 degrees F (163 degrees C) and keep baking until the center is no longer jiggly, around 30 minutes.
