Chocolate Covered Cherry Pops

Indulgent cherry chocolate pops made with Betty Crocker® vanilla cake mix and frosting - a stunning and irresistible dessert.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 3/4 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 1-lb container)
  • 28 maraschino cherries, stems removed
  • 1 package (16 oz) chocolate-flavored candy coating, chopped
  • 28 paper lollipop sticks
  • 1 large block white plastic foam
  • 2 tablespoons Betty Crocker™ Decorating Decors red sugar crystals
Instructions:
  • Preheat oven to 350°F. Prepare and bake cake mix according to package instructions for a 13x9-inch pan, using water, oil, and eggs. Allow the cake to cool fully before proceeding.
  • First, line a cookie sheet with waxed paper. Next, crumble the cake into a large bowl and mix in the frosting until well combined. Then, shape the mixture into 28 (1 1/2-inch) balls, making sure to place a cherry in the center of each ball and covering the cherry completely. Transfer the balls onto the lined cookie sheet and freeze until firm. Once the cake balls are firm, move them to the refrigerator for storage.
  • Place candy coating in a medium microwavable bowl and microwave on Medium (50%) power for 1 minute. Stir until melted. If needed, continue microwaving in 15-second intervals until smooth. Take a few cake balls out of the refrigerator. Dip 1 lollipop stick about 1/2 inch into the melted candy and gently push it halfway into a cake ball. Dip the cake ball into the candy to coat it, shaking off any extra. Insert the stick into a foam block and sprinkle the cake ball with sugar crystals. Allow it to set before serving.
