Involve kids in Easter treats with chocolate crackle eggs.
Ingredients:
  • 140g rice bubbles
  • 110g icing sugar mixture
  • 80g desiccated coconut
  • 150g butter, chopped
  • 100g white chocolate
  • 100g dark chocolate, melted
  • Coles Rainbow Pearls, to decorate
  • Gold Sugar Stars, to decorate
  • Funny Face Icing Figurines, to decorate
  • Dr Oetker Polka Dots, to decorate
  • Coloured writing icing, to decorate
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing and lining it with parchment paper, ensuring that the paper extends over the two longer sides.
  • In a large bowl, mix rice bubbles, icing sugar, and coconut. Melt butter and white chocolate in a small saucepan over medium heat, then pour over the rice bubble mixture. Stir well to combine. Press mixture into prepared pan and chill in the fridge for 2 hours until firm.
  • Cut egg shapes from the pan using a 5cm egg-shaped cutter. Attach decorations with melted dark chocolate and decorate with writing icing.
