Chocolate cranberry brownie

Delightful festive chocolate brownies to spread joy.
Ingredients:
  • 175g butter, cubed
  • 200g dark chocolate, coarsely chopped
  • 312.50 ml plain flour
  • 2.00 gm baking powder
  • 42.90 gm cocoa
  • 4 eggs, lightly beaten
  • 125.00 ml dried cranberries
  • 135.00 gm brown sugar
Instructions:
  • Preheat your oven to 170°C. Lightly grease and line a 20cm square cake pan with non-stick baking paper.
  • In a heatproof bowl, set over a saucepan of simmering water, combine butter and chocolate. Stir occasionally until smooth and fully melted. Remove from heat and set aside.
  • Sift flour, baking powder, and cocoa into a large bowl. Combine chocolate mixture with the dry ingredients. Mix in eggs, cranberries, and brown sugar until fully incorporated. Transfer the batter into the lined cake pan and bake for 35 minutes or until the center is slightly sticky when a skewer is inserted. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
