Nutty and fruity energy bars ideal for snacking on-the-go, camping, or packing in lunches.
Ingredients:
  • 0.5 cup raw almonds
  • 0.5 cup walnuts
  • 0.5 cup pitted dates
  • 0.5 cup dried cranberries
  • 0.125 cup shredded coconut
  • 3 teaspoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a food processor, pulse almonds and walnuts until chopped. Gradually add dates and cranberries, then mix in coconut, cocoa, and vanilla extract. Process until you reach your preferred texture.
  • Shape dough into a log that is 2 inches wide and then slice it into ten 3/4-inch thick rounds. Arrange the rounds on the baking sheet.
  • Bake in the hot oven until firm, approximately 10 minutes.
